0 DRUMSTICK BRINJAL CURRY

Drumstick Brinjal Gravy/ Katharikka Murungakai Kuzhambu


Brinjal - 2 big ( cut into lengthwise)
Drumstick - 7 to 8 pieces
Onion - 2 medium chopped fine
Tomato - 2 medium chopped fine
Chilli powder - 1 tbsp
Dhaniya powder - 1 tbsp
Jeera powder - 1tbsp
Coconut paste - 1 cup( or can also can use coconut milk)
Optional use of tamarind pulp - 1/2 cup of dilute pulp


Tempering :-
Mustard seeds ,urad dhal, curry leaves


Heat oil in a kadai/pan and add onions. Fry till golden brown, then add tomatoes and mash and cook well. Fry till water leaves and oil floats on top. Next add the brinjal and drumsticks and saute for a minute, then add all the powders( can substitute with our home made curry powder) and if using tamarind pulp add now and cook till the vegetables are soft. Finally add the coconut paste and salt and cook in low flame for 10 minutes. Temper it with the tempering ingredients. Serve with hot rice and veggie.
