3 PALAK PANEER


Palak/SPinach - 1 big bunch/1 pack
Onion - 1 small chopped fine
Green chillies - 4(as spice needed)
Ginger garlic paste - 1 tbsp
Chilli powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Cashew pieces - 5- 6 whole no
Poppy seeds - 1/2 tsp
Jeera/cumin seeds - 1/2 spoon
Fried paneer cubes - As needed
Salt as needed
Sugar - 1/4 tsp
Oil - 1 1/2 tbsp

In a kadai add very little oil and fry palak and green chillies till the leaves are shrinked and cooked well. Alternative way in a vessel add 3/4 cup of water and add the spinach and green chillies and allow it to boil in medium flame/ cook till they are done. Cool it and make a paste.


My tip...you can fry or boil it way ahead before cooking...but just grind the mix in a mixer/blender just when you are about to cook.The taste sure differs ...so grind just when you are just starting to cook.

In a different kadai/pan heat oil and add jeera/cumin seeds( optional), next add onion and fry till golden brown( can add sugar- this will help to reatin the green color of the palak), then add ginger garlic paste and saute. Now add the palak paste and (cashew and poppy seeds paste). Finally add salt, chilli powder and garam masala powder and cook for just 3 - 4 mts. Just before removing add the fried paneer cubes.

You can add the cashew and poppy seeds depending on your taste and thickness or omit any of those.I like to add them as it tastes good and we can also get good consistency.
