2 VAANGI / VANGI BATH(BRINJAL RICE)


Basmati Rice - 2 cups
Onion - 1 chopped fine or thinly
Tomato - 2 or 3 chopped fine
Ginger garlic paste - 1 tbsp
Brinjal - 5 or 6 ( cut into thin long pieces)
Chilli powder - 1 tbsp
Turmeric powder - 1/4 tbsp
Vaangi bath powder - 1 tbsp
Salt as needed
Oil - 1 or 2 tbsp
Spices - jeera/cumin seeds - 1 tsp,cardamom - 2,clove - 2,cinnamon - 2 small piece.

Garnishing:-
Fried cashew,coriander leaves can also a tbsp of ghee on top.


Wash and soak ricefor 10 minutes...add little salt and cook separately may be in a rice cooker with 4 cups of water and once done allow it to cool.

In a kadai/pan heat oil and add all the spices, wait for few seconds add onions and fry till brown. Next add ginger garlic paste and saute for a minute, then add tomatoes and mash and cook well. Next step is to add chopped
( length wise) brinjals and cook till they are done( soft but not mushy for around 5 - 6 minutes)...now add all the powders, salt and mix well. Reduce flame and add the rice and mix lightly.
Garnish with chopped cilantro and fried cashew.
