0 BITTERGOURD/PAVAKKAI PORIAL


This also is my SIL Priya's recipe sent by her with photo.

Bitter gourd - 4 medium
Onion - 1 medium
Mustard seeds - 1/4 tsp
Urad dhal - 1/4 tsp
Curry leaves
Sambar powder - 1 tsp
Grated coconut - 2 tbsp
Tamarind pulp - 1/4 cup ( optional use)
Salt as needed
Oil - 2 tbsp

Chop onions into small pieces...wash and pat dry bittergourd and trim the edges...cut into half and remove the seeds....next cut them into thin pieces...

Heat oil in a kadai and add mustard seeds ,urad dhal and curry leaves....when they start to splutter up add onions and fry till light brown...next add chopped bitter gourd and fry ...reduce flame and if using tamarind pulp(optional)...add them and cook till it is dry and bitter gourds are soft and cooked well...next add salt and sambar powder...mix well and garnish with grated coconut..
Using tamarind pulp is always optional...you can make this dish even without them.

Alternatively you can:

Fry the bitter gourd in little oil till it gets tender. And then heat the oil in the pan
add mustard seeds,onions and fry till it turns brown . Then add 1/2 spoon redchilly
powder,few tomatoes ,salt and fry for 2 minutes.u can also add little sugar .
