Carrot Halwa/ Gajar Ka Halwa/ Carrot Pudding


This is my 200th blog post, so I wanted to post something sweet and decided carrot halwa. Somehow it has been pending from a long time.
Carrot halwa/halva also famously called in hindi as gajar ka halwa is one of my hubby's favourite sweet. This sweet is the only sweet that I could make or tried before marriage and also the first one that I tried it on my husband after marriage. He liked it so much, that I started to make it often almost like every Friday evenings, until I got bored of it and learnt many more. But he never got bored to eat this and loved everytime I prepared them.


Peel and grate the carrots in a grater with thicker holes ...if you grate with a small hole, it will get mushy very soon. But , it all depends on the texture that one likes apart from taste...so just grate the way you want.

Grated carrot - 4 cups
Milk - 2 cups
Sugar - 1/2- 3/4 cup( check for sweetness and add if required later)
Ghee - 5 tbsp
Cardamom powder - 1/4 tsp
Cashew pieces - 10( can add more)
Raisins - 10 ( can add more).


Heat 2 tbsp of ghee in a kadai/pan and fry cashew and raisins... when they turn light brown ... remove them and keep aside. In the same kadai/pan with ghee add grated carrots and fry well ( stirring often)...reduce flame and let it to cook for few minutes ( around 8 - 10 minutes) ....then add milk and allow it to cook together till the carrots are soft and the milk is all drained out/reduced ...add sugar( add sugar more or less depending upon the sweetness required) and cook till the halwa is thickened..add remaining ghee and mix and stir well ... next add cardamom powder and the fried cashew and raisins. The cooking process will take time, but the result is good. If you want to make this sweet in a hurry, then you can cook the carrots with milk in a pressure pan and reduce the cooking time. I have tried this method also many times :D.
Place the grated carrot along with milk in a pressure pan and cook for 3 - 4 whistles...then add it to the kadai and follow the remaining procedure.
